Alex - If the film is too fast for the conditions, slap an ND filter on the front.... Problem solved
The grain is a part of my pics I work with it, or used to. Now to get the same quality of grain, I have to clean the digital noise up with Dfine and add some false 'quality' grain with another bit of software. Thats just plain wrong
