The above only applies to a creating a new file in Photoshop not editing an existing photo.

The 72 dpi is a tag embeded by Canon into the Jpeg. Sadly this is not configurable on the camera. Scanning the web the most common suggestion is to create a photoshop action script that opens the jpeg and changes the resolution without resampling and then resave it.

Otherwise if you know a programmer he could write a simple program to modify the tag.

I assume you are not using raw otherwise ARC could configured to whatever dpi you require.
