If the camera always burns out highlights then dial in some -ve exposure compensation. The metering mode you use is important and how and where you meter. In some situations the dynamic range is just too great for the camera and either highlights or shadow will have to be wrong and you have to decide which. You also have to learn to recognize the situations where the meter will be fooled. As Duncan says post some examples with details.
